That this blog forces me to look for the positive each day. Sometimes all I want to do is write something sarcastic like "what I love: NOT being sick", but that is not allowed. This blog is for things that truly make me happy, and it forces me to, every single day, look at my life and ask myself "what was the highlight of my day today? What am I loving right now?" and that is such a good exercise for me. It helps me focus on the positive.

What I Love: 1/10/13
This recipe. It's quite yummy! I like the chocolate chips, but dried fruit would also work. It is adapted from the recipe for "Currant Scones" in Tea Time by M. Dalton King.
Basic Scones
2 C. flour
1/3 C. sugar
2 tsp. baking powder
1 tsp. salt
4 tbsp. cold butter
3/4 C. milk
1 egg
1/2 C. chocolate chips
4 tbsp. butter, melted
Preheat oven to 350 degrees. Sift together flour, sugar, baking powder and salt. Cut the butter into the dry ingredients until the mixture is crumbly. In another bowl, blend the milk and egg. Pour into the dry ingredients stirring until it is mixed. Add the chocolate chips and mix well. The dough will be very wet. Thoroughly flour a flat surface, and turn dough out on it. Knead the dough lightly, and pat it out into 3/4 inch thickness. Use a biscuit cutter to cut out the scones and place them on a greased cookie sheet. Use a pastry brush to spread the melted butter over the tops of the scones. Bake for 25-30 minutes. Let cool on a wire rack, and serve with butter or your favorite spread (Nutella or strawberry jam are mine!)

Frozen yogurt drops! I found them via Pinterest, but couldn't track down the original source. Basically, you just spoon yogurt into a plastic bag, cut off the corner, and squirt bite sized pieces onto wax paper. Stick in the freezer for a few hours and voila! A sweet, healthy treat!

My little sister, Anna. Today's her birthday. She is seventeen years old! She's pretty special. Because we are close in age, we were best friends when we were little. Cortese Restaurant. It is a favorite for my family. It is located in Binghampton, which makes it a nice halfway point for us and our grandparents. They have some amazing homemade pasta dishes and their house Italian dressing is a staple. My grandma loves it so much that she buys it by the quart.

What I Love: 1/1/13
2013!! A whole new year! What will it bring? I admit, I am not one for resolutions. If I make any, they usually get forgotten within a week. However, there are some things I want to remind myself of for this next stage of life:
1. To let God lead and teach me, always. It is so easy for me to get ahead of myself and wind up distracted, confused, and stressed. I need to remember to always take a deep breath, trust, and pray.
2. To love people, no matter how they may treat me. My Jesus loved me so much he DIED for me, even when I forget Him or don't trust Him. How can I do anything less for the people around me?
3. To enjoy life, no matter what. This life is such a blessing. It is beautiful, vibrant, invigorating. Even when I am stressed, freaking out, or depressed, I need to look around and see the wonder that surrounds me constantly.
